Here, a wonderful brick vaulted ceiling and stylish interior design make for a distinctive look. The cuisine of dynamic duo Juan Amador and David Fleckinger more than lives up to the setting – they use the finest ingredients to devise a modern and sophisticated set menu comprising dishes that are finely balanced and consistently harmonious. Take, for example, the wonderfully firm red mullet fillet, cooked to a perfect translucent finish, topped with well-seasoned anchovies and accompanied by an incredibly intense piparras, tomato and olive emulsion bursting with fruity notes and gentle heat, as well as a highly aromatic, delicate Marcona almond cream.
