Chef Mario Elias conjures up a creative score that can vary from complex to surprising, depending on his inspiration, but which is always flawlessly balanced, courtesy of his respectful use of fine local produce. He may enhance medium rare venison with red cabbage and kumquat, a terrine of sweet chestnuts and a bao bun stuffed with black tripe.
