Lai Heen champions modern Cantonese cooking made with the best ingredients and deeply rooted in tradition. The signature steamed sunflower seed-fed chicken must be pre-ordered; the crispy-skinned lemongrass squab wins many hearts. Try the braised beef skirt in clear broth and enjoy the gelatinous, springy membrane attached to the beef. The deep flavour of the beef bone broth simmered for hours is nicely balanced by the sweetness of the radish.
