Pelegrini

In the heart of the old town, the restaurant occupies Villa Pelegrini-Tambača, a Renaissance palazzo situated next to the Cathedral of St. James. Chef Rudolf Štefan, deeply knowledgeable about the region, distinguishes himself through constant pursuit of local products: he collaborates with top winemakers for exclusive wine production, makes his own olive oil, and prioritizes land and sea ingredients from Šibenik and its surroundings. Two tasting menus of four and six courses offer a modern reinterpretation of traditional Dalmatian cuisine with creative touches and refined presentations. Among the house signatures is lobster served on mushroom carpaccio with ricotta, sea grapes, and pickled cornichons: a surprising balance of sweetness and acidity. The wine list, with over 500 labels, is of considerable depth and breadth. In warmer months, dining is available along the external staircase with splendid views of the cathedral.
