Chef Golsteijn does not shy away from daring combinations, but always ensures that the flavours enhance each other. For instance, he bastes succulent premium-grade turbot with a béchamel made with an intense fish fumet and cauliflower. A subtly sweet black garlic cream, plump morels stuffed with Jerusalem artichoke purée and a floral white wine sauce add extra layers of nuance to this flavour-packed dish.
