From the amuse-bouche onwards, the chef reveals his love of global influences, while showing equal mastery of the classics. Take, for instance, perfectly medium-rare chateaubriand wrapped in spinach leaf and puff pastry, placed on a creamy mushroom purée and paired with carrot seasoned with fermented garlic cream, a wonderful chilli sauce and grated summer truffle.
