Once you’re settled in the striking Scandic-style dining room, the main event begins: a procession of refined, stunningly detailed dishes. Mark’s understanding of flavour is impeccable, showcased in brilliant combinations like warm ripe tomatoes with tiny cubes of bone marrow.
